In 1923 a number of winegrowers joined forces to better withstand the economic difficulties of the period. Together, in the middle of the Chablis vineyards, they created a cooperative winery to market their wines under the name La Chablisienne.
The winemaking process, essential to revealing the full richness and complexity of the Chablis terroirs, begins immediately after the harvest when the member winegrowers press the grapes to extract the juice. La Chablisienne then takes over, carrying out the racking, fermentation (both alcoholic and malolactic) and maturing stages.

Le Finage 2024 is pale gold in color, clear and shiny with subtle golden highlights. The first nose is discreet, with delicate notes of toasted bread and roasted dried fruits. It then opens up to aromas of ripe white fruits (pear, peach) with some hints of fresh almond and hazelnut in the background. On the palate, it is straight and pure with notes of lemon. Body and sweetness come through in the middle of the palate and accompany this range of aromas, with a nice lasting finish.
It will be perfect as an aperitif but also goes well with sashimi or fresh to slightly aged goat cheeses.
